Thomas Jefferson grew hyacinth bean at Monticello, and one look explains why: purple stems, lilac pea-flowers, and then the showstopper — clusters of glossy magenta pods so lacquered and jewel-like that visitors will ask if they're real. It drapes an arbor in weeks, not months.
Bees work the flower spikes all summer while the vine shrugs its way up 10 to 15 feet of fence or teepee. Treat it as pure ornament — the raw beans and pods are toxic without careful traditional cooking — and it's the easiest drama an annual can offer. One packet, one spectacular season.
