Storage Apple Varieties: Late Keepers Compared

Keeping apples through winter is older than refrigeration, and it still comes down to variety: an apple's storage life is written in its genetics. The rule of thumb is that late ripening predicts long keeping — a dense, starchy October apple like GoldRush or Granny Smith holds four to six months in a cold cellar, while a soft August apple is compost by Thanksgiving. Many keepers are also better AFTER storage; GoldRush and Fuji ripen from sharp to honeyed over the months.

These 13 varieties all carry their harvest into October or beyond (plus Honeycrisp, a September apple that stores like a keeper). The classic cellar plan is two trees from this table with different peaks — say Honeycrisp for fall eating and GoldRush to carry you to April. Storage conditions matter as much as the cultivar: just above freezing, high humidity, and away from potatoes (their ethylene sprouts each other).
